TRADITIONAL ARROZ CON GANDULES
Heat Achiote seeds (Annato) with oil of your choice until you get a dark red color.
*Caution oil and seeds can get hot and pop
Once you have your rich color strain, strain your oil and pour into a cast iron pot.
Combine the achiote with Nana's Sofrito and simmer on medium heat for about 5 minutes.
Now add your tocino, ( diced pork) gandules, salt and pepper.
*You are not obligated to use pork in this dish.
Cook your gandules mix for about 15 minutes.
Now add your white or brown rice.
Add your water and cook for 30-40 minutes.
Your end result: Arroz Con Gandules.
